Banana Flax Muffins

Instructions
- Preheat the oven to 425ºF.
- In a bowl, whisk together the mashed banana, egg, brown sugar, vanilla, and olive oil.
- In another bowl, mix together the flour, baking powder, salt, flaxseed, and walnuts.
- Combine the wet and dry ingredients, stirring until just combined.
- Line a muffin tin with paper liners and fill each well with the batter.
- Bake at 425ºF for 5 minutes, then reduce the temperature to 350ºF and bake for an additional 20 minutes.
- Remove the muffins from the tin to cool.
