Ingredients

The batter

  • ¾ cup mashed ripe bananas
  • 1 large egg
  • 2 Tbsp brown sugar
  • ½ tsp vanilla extract
  • 2 Tbsp olive oil
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ cup ground flaxseed

Optional ingredients

  • ¼ cup chopped walnuts

Instructions

  1. Preheat the oven to 425ºF.
  2. In a bowl, whisk together the mashed banana, egg, brown sugar, vanilla, and olive oil.
  3. In another bowl, mix together the flour, baking powder, salt, flaxseed, and walnuts.
  4. Combine the wet and dry ingredients, stirring until just combined.
  5. Line a muffin tin with paper liners and fill each well with the batter.
  6. Bake at 425ºF for 5 minutes, then reduce the temperature to 350ºF and bake for an additional 20 minutes.
  7. Remove the muffins from the tin to cool.
