Ingredients

The Muffin Base

  • cups white whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 2 overripe bananas
  • 2 large eggs (room temperature)
  • ½ cup melted coconut oil (cooled)
  • cup honey
  • ½ cup yogurt
  • 1 tsp vanilla
  • ¼ cup rolled oats (optional)

The Fruit

  • cups fresh strawberries

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with spray or liners.
  2. In a small bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, mash the bananas until smooth, then whisk in the eggs, coconut oil, honey, yogurt, and vanilla until well combined.
  4. Fold in the flour mixture and then the oats, being careful not to over-mix.
  5. Gently fold in the strawberries, stirring only a few times.
  6. Use an ice cream scoop or measuring cup to fill the prepared muffin tin.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
