Instructions
- Preheat the oven to 350°F and prepare a muffin tin with spray or liners.
- In a small bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
- In a large bowl, mash the bananas until smooth, then whisk in the eggs, coconut oil, honey, yogurt, and vanilla until well combined.
- Fold in the flour mixture and then the oats, being careful not to over-mix.
- Gently fold in the strawberries, stirring only a few times.
- Use an ice cream scoop or measuring cup to fill the prepared muffin tin.
- Bake for 18-20 minutes or until a toothpick comes out clean.
