Instructions
- Preheat the oven to 400°F and prepare a muffin pan with cooking spray or liners.
- In a large bowl, whisk together the flour, brown sugar, baking powder, and baking soda.
- In a separate medium bowl, combine the oats and yogurt, then mix in the mashed banana, canola oil, and egg.
- Combine the wet and dry mixtures, stirring until just moistened, and fold in the chopped strawberries.
- Divide the batter evenly among the muffin cups and bake for 17 to 20 minutes, or until a toothpick comes out clean.
