Ingredients

  • 1 cup whole wheat pastry flour
  • ¾ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 cup old fashioned oats
  • 1 6 oz container plain non-fat Greek yogurt
  • 1 cup ripe banana, mashed
  • ¼ cup canola oil
  • 1 large egg
  • ½ cup strawberries, frozen or fresh, chopped

Instructions

  1. Preheat the oven to 400°F and prepare a muffin pan with cooking spray or liners.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, and baking soda.
  3. In a separate medium bowl, combine the oats and yogurt, then mix in the mashed banana, canola oil, and egg.
  4. Combine the wet and dry mixtures, stirring until just moistened, and fold in the chopped strawberries.
  5. Divide the batter evenly among the muffin cups and bake for 17 to 20 minutes, or until a toothpick comes out clean.
