Strawberry Oat Muffins

Ingredients

  • 1 ¾ cups white whole wheat flour or regular whole wheat flour
  • cup old-fashioned oats
  • 2 tablespoons old-fashioned oats for sprinkling
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • cup extra-virgin olive oil
  • cup maple syrup
  • 2 eggs preferably at room temperature
  • 1 cup plain Greek yogurt
  • 2 teaspoons vanilla extract
  • 2 cups hulled and diced ripe strawberries
  • 1 teaspoon turbinado sugar (optional)

Instructions

  1. Preheat the oven to 400°F and grease the muffin tin if necessary.
  2. In a large bowl, mix the flour, oats, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the oil, maple syrup, and eggs. Then add the yogurt and vanilla.
  4. Combine the wet and dry ingredients, mixing until just combined, then gently fold in the strawberries.
  5. Divide the batter among the muffin cups, filling them quite full.
  6. Sprinkle the tops with remaining oats and turbinado sugar, then bake for 19 to 22 minutes until golden and a toothpick comes out clean.
  7. Cool the muffins in the tin before removing.
