Instructions
- Preheat the oven to 425°F.
- Sift whole wheat flour, oat flour, and baking powder into a large bowl and mix in Stevia and salt.
- In a separate bowl, whisk together eggs, almond milk, melted coconut oil, honey, and vanilla.
- Combine wet and dry ingredients, folding gently until just mixed.
- Divide the batter into 12 muffin cups and top each with a teaspoon of strawberry jam, swirling it in.
- Bake for 15 to 20 minutes or until a toothpick comes out clean.
- Cool on a wire rack before serving.
