Ingredients

  • 1 large egg, beaten
  • 2 tablespoons oil
  • ½ cup strawberry jam

Instructions

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. Mix the dry ingredients: flour, flaxmeal, sugar, baking powder, and salt.
  3. 3. Add milk, beaten egg, and oil; mix until just combined.
  4. 4. Fold in the strawberry jam gently, leaving some swirls.
  5. 5. Fill muffin tins about ¾ full and swirl a bit of jam on top.
  6. 6. Bake for 15 minutes or until golden brown and springy.
  7. 7. Sprinkle with powdered sugar before serving.
