Instructions
- 1. Preheat the oven to 350°F (175°C).
- 2. Mix the dry ingredients: flour, flaxmeal, sugar, baking powder, and salt.
- 3. Add milk, beaten egg, and oil; mix until just combined.
- 4. Fold in the strawberry jam gently, leaving some swirls.
- 5. Fill muffin tins about ¾ full and swirl a bit of jam on top.
- 6. Bake for 15 minutes or until golden brown and springy.
- 7. Sprinkle with powdered sugar before serving.
