Ingredients

The batter

  • 1 unit Egg
  • ¼ Cup Avocado Oil
  • 1 Teaspoon Vanilla Extract
  • ¾ Cup Milk of Choice
  • ½ Cup Coconut Sugar
  • 1 ½ Cups Gluten-Free Flour or Oat Flour
  • 1 Teaspoon Baking Powder

The fruit

  • 1 ½ - 2 Cups Fresh Strawberries, chopped

Instructions

  1. Preheat the oven to 350°F.
  2. Mix the wet ingredients in one bowl and the dry ingredients in another.
  3. Combine the wet and dry ingredients until just mixed, avoiding over-mixing.
  4. If the batter is too dry, add more milk one tablespoon at a time.
  5. Chop the strawberries and gently fold them into the batter.
  6. Grease a muffin tin and fill each cavity with the batter.
  7. Bake for 20-22 minutes until golden on top.
  8. Remove from the oven, let cool, and enjoy.
