Ingredients

The batter

  • ½ cup salted butter, melted
  • ½ cup runny honey
  • 2 teaspoons vanilla extract

  • ½ cup plain greek yogurt
  • 2 large eggs
  • cups all-purpose flour
  • 1 cup whole wheat flour

  • ½ cup high quality strawberry jam
  • 2 teaspoons lemon zest

Instructions

  1. Preheat the oven to 350°F and coat 18 muffin tins with nonstick spray.
  2. In a large bowl, whisk together melted butter, honey, vanilla, buttermilk, Greek yogurt, and eggs until smooth.
  3. Add the all-purpose flour, whole wheat flour, baking powder, and baking soda, mixing until just combined.
  4. In a separate bowl, combine diced strawberries, jam, and lemon zest, then gently fold this mixture into the batter.
  5. Divide the batter among the muffin tins and bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Serve warm or at room temperature with butter.
