Ingredients

Dry Ingredients

  • 1 cup oat flour
  • ½ cup white whole wheat flour
  • cup chia seeds
  • 2 tbsp sugar
  • ½ tsp salt
  • 1 tsp cinnamon
  • 2 tsp baking powder

Wet Ingredients

  • 2 medium bananas (mashed)
  • 2 tbsp honey
  • ¼ cup low-fat milk
  • 1 large egg
  • 1 cup wild blueberries
  • 2 tbsp water

Instructions

  1. 1. Preheat the oven to 400 degrees and prepare 12 muffin tins.
  2. 2. In a large bowl, combine all the dry ingredients.
  3. 3. In a separate medium bowl, mix all the wet ingredients.
  4. 4. Add the wet ingredients to the dry ingredients and mix until just combined, avoiding overmixing.
  5. 5. Spoon the muffin batter into the prepared muffin tins.
  6. 6. Bake for 15-20 minutes until the tops are golden brown and a toothpick comes out clean.
