Ingredients

Dry Ingredients

  • 1 cup white whole wheat flour
  • ½ cup ground oat flour
  • cup rolled oats
  • ½ cup coconut sugar
  • 1 teaspoon baking soda
  • teaspoon salt
  • 1 cup fresh or frozen blueberries

Wet Ingredients

  • 2 large eggs
  • ¼ cup maple syrup
  • ¼ cup unsweetened almond milk
  • ½ cup mashed banana or unsweetened applesauce
  • ½ teaspoon almond extract
  • 2 tablespoons melted coconut oil

Instructions

  1. Preheat the oven to 350ºF and prepare a muffin tin with liners or cooking spray.
  2. In a large bowl, whisk together the dry ingredients.
  3. In a separate medium bowl, whisk the eggs and then mix in the maple syrup, almond milk, mashed banana, and almond extract.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Add the melted coconut oil and mix again until incorporated.
  6. Fill the muffin tin about ¾ full with the batter and top with additional blueberries and rolled oats if desired.
  7. Bake for 20-23 minutes, or until a toothpick comes out clean.
