Ingredients

  • 1 cup milk
  • 1 cup old-fashioned whole rolled oats
  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • ½ cup honey
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Soak the oats in milk for 20 minutes.
  2. Preheat the oven to 425°F (218°C) and prepare a muffin pan.
  3. Mix the dry ingredients in one bowl and the wet ingredients in another bowl.
  4. Combine the wet and dry ingredients, then add the soaked oats and blueberries.
  5. Fill the muffin liners and bake at 425°F for 5 minutes, then reduce the temperature to 350°F and bake for an additional 16-17 minutes.
  6. Allow the muffins to cool before transferring them to a wire rack.
