Ingredients

The muffins

  • ½ cup rolled oats or old fashioned oatmeal
  • ½ cup buttermilk (or regular milk + 1 teaspoon vinegar)

  • 1 unit egg
  • cup brown sugar
  • ½ teaspoon vanilla
  • ½ cup flour
  • 1 tablespoon ground flaxmeal
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup fresh blueberries

The crumbly topping and glaze

  • 1 tablespoon cold butter, cut into small pieces
  • 3 tablespoons flour
  • 1 tablespoon brown sugar
  • ¼ cup powdered sugar
  • ½ tablespoon milk

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin.
  2. Combine oats and buttermilk in a bowl and let soak for 15-20 minutes.
  3. Add melted butter, egg, brown sugar, and vanilla, and stir until combined.
  4. Mix in flour, flaxmeal, baking powder, baking soda, and salt until moistened.
  5. Scoop some batter into each muffin tin to create a base, then fold in blueberries and fill the tins.
  6. Make the crumbly topping by mixing butter, flour, and brown sugar until crumbs form, then sprinkle over muffins.
  7. Bake for 13-15 minutes until golden brown, then drizzle with glaze made from powdered sugar and milk.
