Ingredients

The batter

  • 2 cups whole wheat flour
  • ¼ cup honey
  • cup unsweetened applesauce
  • cup coconut oil, melted
  • 3 large bananas, mashed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon

The blueberries

  • 1 tablespoon white whole wheat flour
  • cups blueberries

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, mash the bananas and mix in honey, applesauce, coconut oil, vanilla extract, and egg until combined.
  3. Add whole wheat flour, baking soda, cinnamon, and salt, mixing until fully combined.
  4. In a small bowl, toss blueberries with 1 tablespoon of white whole wheat flour to coat.
  5. Gently fold the blueberries into the batter.
  6. Fill muffin tins ¾ full with the batter.
  7. Bake for 15-17 minutes or until a toothpick comes out clean.
