Ingredients

Wet Ingredients

  • 1 cup mashed very ripe banana (about 2 large)
  • ½ cup unpasteurized honey
  • ½ cup plain Greek yogurt
  • ¾ cup buttermilk
  • 2 large eggs

Dry Ingredients

  • 3 cups whole wheat flour
  • 1 tbsp baking powder
  • tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp Himalayan salt

Add-ins

  • cups fresh blueberries

Instructions

  1. Preheat the oven to 425°F and grease or line a 12-cup muffin pan.
  2. In a large bowl, combine the dry ingredients and mix well.
  3. In a separate bowl, whisk together the honey, yogurt, and buttermilk.
  4. Add the eggs and mashed bananas to the wet mixture and beat until combined.
  5. Incorporate the dry ingredients into the wet mixture using a rubber spatula.
  6. Coat the blueberries with a few tablespoons of the reserved dry mixture.
  7. Gently fold the blueberries into the batter.
  8. Divide the batter among the muffin cups, filling them to the top.
  9. Bake in the preheated oven for 5 minutes, then reduce the temperature to 375°F and bake for another 15 minutes.
  10. Allow the muffins to cool in the pan for a few moments before transferring them to a cooling rack.
