Instructions
- Preheat the oven to 425°F and grease or line a 12-cup muffin pan.
- In a large bowl, combine the dry ingredients and mix well.
- In a separate bowl, whisk together the honey, yogurt, and buttermilk.
- Add the eggs and mashed bananas to the wet mixture and beat until combined.
- Incorporate the dry ingredients into the wet mixture using a rubber spatula.
- Coat the blueberries with a few tablespoons of the reserved dry mixture.
- Gently fold the blueberries into the batter.
- Divide the batter among the muffin cups, filling them to the top.
- Bake in the preheated oven for 5 minutes, then reduce the temperature to 375°F and bake for another 15 minutes.
- Allow the muffins to cool in the pan for a few moments before transferring them to a cooling rack.
