Instructions
- 1. Preheat the oven to 375°F and prepare a muffin tin with spray or liners.
- 2. In a small bowl, combine the white whole wheat flour, baking powder, baking soda, cinnamon, and salt.
- 3. In a large bowl, mash the bananas until smooth, then whisk in the eggs, coconut oil, honey, and vanilla until well combined.
- 4. Fold the dry ingredients into the wet mixture, being careful not to over-mix.
- 5. Toss the blueberries with the tablespoon of flour, then gently fold them into the batter.
- 6. Use an ice cream scoop or measuring cup to fill the muffin tin with the batter.
- 7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
