Ingredients

Dry Ingredients

  • 2 cups white whole wheat flour
  • 1 cup fresh strawberries
  • 1 medium banana
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • teaspoon salt
  • ½ cup coconut sugar or light brown sugar

Wet Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened plain almond milk
  • ¼ cup honey
  • 3 tablespoons melted coconut oil

Toppings

  • to taste honey
  • to taste unsweetened coconut flakes

Instructions

  1. Preheat the oven to 350ºF and line a muffin tin with muffin liners, spraying with nonstick coconut oil.
  2. In a high-speed blender, combine almond milk, honey, banana, and strawberries and blend until smooth.
  3. Add the remaining dry ingredients (except coconut oil) to the blender and blend until smooth.
  4. Melt the coconut oil, add it to the batter, and blend again until mixed.
  5. Fill the muffin cups almost to the top with the batter.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
