Instructions
- Preheat the oven to 350ºF and line a muffin tin with muffin liners, spraying with nonstick coconut oil.
- In a high-speed blender, combine almond milk, honey, banana, and strawberries and blend until smooth.
- Add the remaining dry ingredients (except coconut oil) to the blender and blend until smooth.
- Melt the coconut oil, add it to the batter, and blend again until mixed.
- Fill the muffin cups almost to the top with the batter.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
