Continental's Rad Na Thai with Shrimp

romaine, outer leaves removed, cut into squares
Instructions
- Combine the first four ingredients in a small pot, bring to a boil, then reduce heat and simmer for 5 minutes before setting aside.
- Heat a skillet or wok until smoking, add canola oil, and heat again until smoking.
- Add shrimp and cook for about 1.5 minutes on one side, then flip and cook for another minute before transferring to a plate.
- Let the oil heat again, then add the beaten eggs and stir vigorously to break them up as they cook.
- Add the noodles, crushed red pepper, and Rad Na sauce, stirring to combine and coat the noodles.
- Once the noodles are hot and coated, add most of the scallions, sprouts, and peanuts, then return the shrimp to the pan and mix well.
- Divide the lettuce among four bowls, top with the noodle mixture, and garnish with the remaining scallions, sprouts, and peanuts.
