Continental's Rad Na Thai with Shrimp

Ingredients

The sauce

  • 6 tablespoons Chinese oyster sauce
  • 3 tablespoons Asian fish sauce
  • 3 tablespoons sugar
  • 3 tablespoons rice wine vinegar

The main ingredients

  • 2 tablespoons canola oil
  • 1 pound shrimp (16/20 count), peeled and deveined
  • 2 eggs lightly beaten
  • 1 pound fresh rice noodles, cut into ¾-inch wide strips
  • ½ teaspoon crushed red pepper flakes
  • 1 bunch scallions, thinly sliced
  • ½ pound fresh mung bean sprouts
  • 1 cup roasted salted peanuts
  • 1 head romaine, outer leaves removed, cut into squares

Instructions

  1. Combine the first four ingredients in a small pot, bring to a boil, then reduce heat and simmer for 5 minutes before setting aside.
  2. Heat a skillet or wok until smoking, add canola oil, and heat again until smoking.
  3. Add shrimp and cook for about 1.5 minutes on one side, then flip and cook for another minute before transferring to a plate.
  4. Let the oil heat again, then add the beaten eggs and stir vigorously to break them up as they cook.
  5. Add the noodles, crushed red pepper, and Rad Na sauce, stirring to combine and coat the noodles.
  6. Once the noodles are hot and coated, add most of the scallions, sprouts, and peanuts, then return the shrimp to the pan and mix well.
  7. Divide the lettuce among four bowls, top with the noodle mixture, and garnish with the remaining scallions, sprouts, and peanuts.
