Ingredients

The clams

  • 300 g lala clams

The seasoning

  • 2 tablespoons oil
  • 1 inch ginger
  • 1-2 pieces red chili
  • 2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • ½ teaspoon sugar
  • 1 teaspoon taucheo
  • 2 tablespoons water
  • 1 stalk scallion

Instructions

  1. Heat a wok or skillet over high heat and add oil.
  2. Add ginger and red chilies, cooking until their aromas are released.
  3. Add the lala clams and stir-fry for a few seconds.
  4. Add soy sauce, dark soy sauce, sugar, taucheo (if using), and water, and stir-fry until the clams open.
  5. Add scallions and stir to combine.
  6. Serve immediately with steamed rice.
