Instructions
- Rinse the clams and soak them in salted water for 20-30 minutes, then scrub the shells and rinse thoroughly.
- Heat a wok and add the cooking oil, then stir-fry garlic and ginger until aromatic.
- Add red chilies and the white part of the scallions, stirring well.
- Add the clams, stir a few times, and cover. When clams start to open, add the seasonings and cover again until most are opened.
- Add the chopped scallions, stir quickly, and serve immediately.
