Ingredients

The clams

  • lbs manila clams

The aromatics

  • 3 cloves garlic, finely chopped
  • 1 in ginger, peeled and cut into thin strips
  • fresh red chilies, seeded and sliced
  • 2 stalks scallions, cut into 2-inch lengths

The sauces

  • 1 teaspoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 tablespoon Shaoxing wine or rice wine
  • ½ teaspoon sesame oil

Optional thickening

  • 3 tablespoons water
  • 1 tablespoon cornstarch

The cooking oil

  • 2 tablespoons cooking oil

Instructions

  1. Rinse the clams and soak them in salted water for 20-30 minutes, then scrub the shells and rinse thoroughly.
  2. Heat a wok and add the cooking oil, then stir-fry garlic and ginger until aromatic.
  3. Add red chilies and the white part of the scallions, stirring well.
  4. Add the clams, stir a few times, and cover. When clams start to open, add the seasonings and cover again until most are opened.
  5. Add the chopped scallions, stir quickly, and serve immediately.
