Japanese Steamed Clams

Ingredients

The clams

  • 1 ½ lb Manila clams

The cooking liquid

  • ½ cup cooking sake
  • ¼ cup mirin
  • 1 ¼ cups water

The seasoning

  • 1/3 stick unsalted butter
  • to taste salt
  • 1 tablespoon scallion, green part only, chopped

Instructions

  1. Clean the clams thoroughly and set aside.
  2. Heat a saucepan over medium heat and add the butter.
  3. Once the butter melts, add the clams and stir quickly.
  4. Add the water, sake, and mirin to the clams and cover the pan.
  5. Turn the heat to high and bring to a boil.
  6. Once all the clams have opened, add salt to taste.
  7. Dish the clams into a bowl, garnish with chopped scallions, and serve immediately.
