Ingredients

The clams

  • 4 pounds fresh clams, cleaned

The sauce

  • ¼ cup butter
  • 1 tablespoon garlic, minced
  • ¼ teaspoon red chili flakes
  • 1 cup white wine
  • 1 tablespoon lemon juice
  • to taste salt
  • to taste black pepper
  • ¼ cup chopped herbs (such as parsley, chives, or basil)

For garnish (optional)

  • herb sprigs
  • lemon wedges

Instructions

  1. Heat a large pot over medium heat and melt the butter.
  2. Add garlic and chili flakes, cooking for 30 seconds while stirring constantly.
  3. Pour in the white wine and bring to a simmer without boiling.
  4. Add the clams to the pot, then season with salt and pepper.
  5. Cover the pot and simmer for 7-9 minutes until the clams have opened, discarding any that remain shut.
  6. Stir in the lemon juice and herbs before serving immediately, garnished with herb sprigs and lemon wedges if desired.
