Ingredients

The clams

  • 2 lbs New England Steamer Clams

The cooking ingredients

  • 2 tablespoon Olive oil
  • 1 tablespoon Chopped garlic
  • 1 each Red Fresno pepper, sliced thinly
  • 1 cup Clam juice
  • 6 ounces Beer
  • 1 each Juice and zest of a lemon
  • 2 tablespoon Butter
  • ¼ cup Flat leaf parsley leaves
  • 4 ounces Butter, melted for dipping

Instructions

  1. Rinse the clams in cold water several times to remove grit, then drain well.
  2. Heat a large sauté pan with a tight-fitting lid over medium heat and add olive oil.
  3. Sauté garlic and sliced pepper for one minute.
  4. Add the clams and cook for one minute before adding clam juice and beer.
  5. Bring to a boil, then add lemon juice, lemon zest, and butter.
  6. Cover and cook until all clams open, about 3 to 4 minutes.
  7. Serve the clams in a shallow dish with the cooking liquid and garnish with parsley.
  8. Serve immediately with melted butter for dipping.
