Instructions
- Rinse the clams in cold water several times to remove grit, then drain well.
- Heat a large sauté pan with a tight-fitting lid over medium heat and add olive oil.
- Sauté garlic and sliced pepper for one minute.
- Add the clams and cook for one minute before adding clam juice and beer.
- Bring to a boil, then add lemon juice, lemon zest, and butter.
- Cover and cook until all clams open, about 3 to 4 minutes.
- Serve the clams in a shallow dish with the cooking liquid and garnish with parsley.
- Serve immediately with melted butter for dipping.
