Steamed Clams with Fresh Basil

Ingredients

The clams

  • 2 dozen little neck clams

The cooking base

  • 2 tsp olive oil
  • 3 cloves garlic
  • 1 tsp unsalted butter
  • ½ cup white wine
  • ¼ cup water

The garnish

  • 2 tbsp fresh herbs (basil or parsley)

Instructions

  1. Heat a large pot on high heat and add olive oil.
  2. Once hot, add garlic and cook until golden.
  3. Add butter, white wine, water, and clams, then cover tightly and reduce heat to medium-low.
  4. Cook for 5 to 10 minutes until the shells open, avoiding overcooking.
  5. Transfer clams to a bowl with a slotted spoon and strain the liquid over them.
  6. Top with fresh herbs and serve with crusty bread.
