Garlic Butter Sauteed Clams

Ingredients

The clams

  • lbs manila clams, rinsed, scrubbed and cleaned

The sauce

  • 2 tablespoons unsalted butter
  • 2 cloves garlic
  • ¼ cup white wine
  • 3 dashes cayenne pepper
  • 1 tablespoon lemon juice
  • 1 teaspoon Italian flat parsley, chopped

Instructions

  1. 1. Heat a skillet over medium heat and add the butter.
  2. 2. Sauté the garlic until slightly browned.
  3. 3. Add the clams to the skillet and toss them quickly.
  4. 4. Pour in the white wine and sprinkle cayenne pepper.
  5. 5. Cover the skillet and cook for 1 minute, or until all the clams have opened.
  6. 6. Stir in the lemon juice and parsley, then remove from heat and serve immediately.
