Paleo Chicken Nonoodle Soup

Ingredients

The soup base

  • 6-8 cups chicken stock
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 1 rib celery, sliced
  • 1/2 medium rutabaga, cut into 'noodles'

The protein

  • 2 cooked chicken breasts

The garnish

  • 1-2 tbsp fresh parsley, chopped

Instructions

  1. Cut the rutabaga into 'noodles' using a mandolin set to a thickness of about 1/8 inch.
  2. Melt some cooking fat in a large stock pot over medium-high heat and cook the onion, salt, and pepper for 2-3 minutes until fragrant.
  3. Add the garlic, carrots, and celery, stirring well.
  4. Pour in the chicken stock, bring to a boil, then reduce heat and simmer until the carrots are almost cooked to your liking.
  5. Add the rutabaga noodles and chicken, cooking until the noodles are tender.
  6. Stir in the chopped parsley and serve immediately.
