Paleo Chicken Nonoodle Soup

Instructions
- Cut the rutabaga into 'noodles' using a mandolin set to a thickness of about 1/8 inch.
- Melt some cooking fat in a large stock pot over medium-high heat and cook the onion, salt, and pepper for 2-3 minutes until fragrant.
- Add the garlic, carrots, and celery, stirring well.
- Pour in the chicken stock, bring to a boil, then reduce heat and simmer until the carrots are almost cooked to your liking.
- Add the rutabaga noodles and chicken, cooking until the noodles are tender.
- Stir in the chopped parsley and serve immediately.
