Ingredients

The crust

  • cups graham cracker crumbs
  • ½ cup chopped pecans
  • 2 tablespoons granulated sugar
  • 5 tablespoons unsalted butter, melted

The filling

  • 1 can pure pumpkin
  • 1 cup light or dark brown sugar
  • 2 large eggs
  • cups heavy cream
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon cornstarch
  • teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • teaspoon fresh ground pepper
  • optional whipped cream
  • optional chopped pecans

Instructions

  1. Preheat the oven and prepare a baking pan with parchment paper.
  2. Make the crust by processing the graham crackers and pecans, then mixing in sugar and butter. Press into the pan and pre-bake.
  3. For the filling, mix all filling ingredients until smooth and pour into the warm crust.
  4. Bake until the filling is set, then cool completely before refrigerating.
  5. Serve chilled, topped with whipped cream and pecans if desired.
