Instructions
- Preheat the oven to 350ºF and prepare an 8×8-inch cake pan with parchment paper and cooking spray.
- Mix all crust ingredients together to form a dough and press it into the prepared pan evenly.
- Bake the crust for 10 minutes.
- While the crust is baking, prepare the filling by mixing coconut sugar and pumpkin puree in a large bowl, then add beaten eggs and the remaining filling ingredients.
- Pour the pumpkin filling over the baked crust and return to the oven to bake for 24-28 minutes.
- Allow the bars to cool for at least an hour before lifting them out of the pan using the parchment paper.
- Cut the bars into 9 squares.
- For the whipped topping, whip the cream with maple syrup and vanilla until stiff peaks form, then serve on top of each bar.
