Ingredients

The crust

  • cups almond flour, superfine
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

The filling

  • ½ cup coconut sugar
  • 1 cup pumpkin puree
  • 3 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger

Whipped cream topping

  • ½ cup heavy whipping cream
  • 2 teaspoons maple syrup
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350ºF and prepare an 8×8-inch cake pan with parchment paper and cooking spray.
  2. Mix all crust ingredients together to form a dough and press it into the prepared pan evenly.
  3. Bake the crust for 10 minutes.
  4. While the crust is baking, prepare the filling by mixing coconut sugar and pumpkin puree in a large bowl, then add beaten eggs and the remaining filling ingredients.
  5. Pour the pumpkin filling over the baked crust and return to the oven to bake for 24-28 minutes.
  6. Allow the bars to cool for at least an hour before lifting them out of the pan using the parchment paper.
  7. Cut the bars into 9 squares.
  8. For the whipped topping, whip the cream with maple syrup and vanilla until stiff peaks form, then serve on top of each bar.
