Ingredients

The base

  • 15 ounce can of pumpkin puree
  • ¾ cup coconut flour
  • ½ cup maple syrup
  • ¼ cup almond milk
  • 1 teaspoon vanilla extract
  • 2 units eggs
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • ½ teaspoon baking soda

The mix-ins

  • cup chocolate chips

Instructions

  1. Preheat the oven to 350ºF.
  2. Grease an 8x8 baking dish.
  3. In a large bowl, mix together coconut flour, pumpkin puree, maple syrup, vanilla extract, almond milk, eggs, pumpkin pie spice, cinnamon, baking soda, and salt until well combined.
  4. Stir in the chocolate chips.
  5. Transfer the batter to the prepared baking dish.
  6. Bake for 45 minutes or until set and lightly golden brown on top.
  7. Cool completely and refrigerate for at least 8 hours before cutting into nine pieces.
