Ingredients

Crust Layer

  • 1 ½ cups almond flour
  • ¾ cup finely chopped pecans
  • ¼ cup coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Pumpkin Layer

  • 1 ½ cups pumpkin puree
  • 2 eggs
  • ½ cup full-fat coconut milk
  • ¼ cup maple syrup
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking soda

Glaze (Optional)

  • 1 cup powdered sugar
  • 3 tablespoons almond milk or water
  • ½ teaspoon pumpkin pie spice

Instructions

  1. Preheat the oven to 350°F.
  2. Line an 8x8 baking dish with parchment paper, spraying the inside first.
  3. In a medium bowl, combine the crust layer ingredients and mix well.
  4. Press the mixture into the bottom of the baking dish to form the crust.
  5. Bake the crust for 9 minutes, then remove from the oven.
  6. In a blender, combine all pumpkin layer ingredients and blend until smooth.
  7. Allow the crust to cool for about 10 minutes, then pour the pumpkin filling on top and spread evenly.
  8. Return the baking dish to the oven and bake for 28-30 minutes.
  9. Let the bars cool completely before slicing into squares.
  10. If desired, whisk together the glaze ingredients and drizzle on top.
