Vegan Sweet Potato Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • ½ teaspoon chili flakes
  • ¼ cup blood orange juice
  • 2 medium sweet potatoes, peeled and diced
  • 5 cups vegetable stock
  • to taste sea salt and ground black pepper

Instructions

  1. Heat oil in a large soup pot over medium heat.
  2. Add onions, garlic, coriander, and chili flakes; sauté until onions are soft but not browned.
  3. Stir in blood orange juice and sweet potatoes, then season with salt and pepper.
  4. Pour in vegetable stock and bring to a boil, then reduce to a simmer.
  5. Cook until sweet potatoes are tender, about 12-15 minutes.
  6. Purée the soup until smooth, adjusting seasoning as needed.
  7. Serve hot, optionally garnished with sweet potato chips.
