Vegan Sweet Potato Soup

Instructions
- Heat oil in a large soup pot over medium heat.
- Add onions, garlic, coriander, and chili flakes; sauté until onions are soft but not browned.
- Stir in blood orange juice and sweet potatoes, then season with salt and pepper.
- Pour in vegetable stock and bring to a boil, then reduce to a simmer.
- Cook until sweet potatoes are tender, about 12-15 minutes.
- Purée the soup until smooth, adjusting seasoning as needed.
- Serve hot, optionally garnished with sweet potato chips.
