Instructions
- Heat olive oil in a large pot over medium heat, then sauté onion, salt, and pepper until soft.
- Add sweet potatoes and apple, cooking until they begin to soften.
- Stir in garlic, ginger, coriander, and smoked paprika until fragrant.
- Add apple cider vinegar, broth, and coconut milk; bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
- Allow soup to cool slightly, then blend until smooth, adjusting thickness with additional broth if necessary.
- Season to taste and serve, garnished with coconut milk, pepitas, cilantro, and Aleppo pepper.
