Ingredients

The soup

  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, chopped
  • 1 heaping teaspoon sea salt
  • 3 medium sweet potatoes, peeled and cubed
  • 1 medium apple, peeled and chopped
  • 3 cloves garlic, grated
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • 1 teaspoon apple cider vinegar
  • 3 to 4 cups vegetable broth
  • 1 14-ounce can full-fat coconut milk

Garnishes

  • to taste pepitas
  • to taste fresh cilantro
  • to taste Aleppo pepper or red pepper flakes
  • for serving crusty bread

Instructions

  1. Heat olive oil in a large pot over medium heat, then sauté onion, salt, and pepper until soft.
  2. Add sweet potatoes and apple, cooking until they begin to soften.
  3. Stir in garlic, ginger, coriander, and smoked paprika until fragrant.
  4. Add apple cider vinegar, broth, and coconut milk; bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
  5. Allow soup to cool slightly, then blend until smooth, adjusting thickness with additional broth if necessary.
  6. Season to taste and serve, garnished with coconut milk, pepitas, cilantro, and Aleppo pepper.
