Black Bean and Sweet Potato Soup

Instructions
- Heat olive oil in a large soup pot and cook the onion until tender.
- Add garlic and cook for about 2 minutes.
- Stir in sweet potato and roasted red pepper, cooking for 5 minutes.
- Add broth, water, black beans, and tomatoes, stirring well.
- Mix in chili powder, cumin, and red pepper flakes, then add cilantro.
- Let the soup simmer on medium-low for 30 minutes or until sweet potatoes are soft.
- Season with salt and pepper, then serve hot.
