Ingredients

Base Ingredients

  • 2 Tbsp cooking oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • 2 Tbsp chili powder
  • 1 tsp ground cumin
  • ¼ tsp cayenne pepper
  • ½ cup masa harina or cornmeal
  • 6 cups vegetable broth
  • 2 Tbsp tomato paste
  • 1 15 oz can diced tomatoes
  • 1 15 oz can black beans
  • 1 medium sweet potato
  • 1 cup frozen corn kernels

Optional Toppings

  • to taste cilantro
  • to taste avocado
  • to taste shredded cheddar
  • to taste sour cream
  • to taste crispy tortilla strips
  • to taste fresh lime

Instructions

  1. Dice the onion and mince the garlic, then sauté in cooking oil until transparent.
  2. Add chili powder, cumin, and cayenne, and sauté for an additional minute.
  3. Stir in masa harina or cornmeal and sauté for 2-3 minutes.
  4. Whisk in vegetable broth and bring to a simmer, allowing it to thicken slightly.
  5. Mix in tomato paste until dissolved, then add diced tomatoes, drained black beans, and corn.
  6. Peel and cube the sweet potato, then add it to the pot.
  7. Cover and simmer for 30 minutes, stirring occasionally until sweet potatoes are soft.
  8. Adjust salt to taste and serve with optional toppings.
