Instructions
- Dice the onion and mince the garlic, then sauté in cooking oil until transparent.
- Add chili powder, cumin, and cayenne, and sauté for an additional minute.
- Stir in masa harina or cornmeal and sauté for 2-3 minutes.
- Whisk in vegetable broth and bring to a simmer, allowing it to thicken slightly.
- Mix in tomato paste until dissolved, then add diced tomatoes, drained black beans, and corn.
- Peel and cube the sweet potato, then add it to the pot.
- Cover and simmer for 30 minutes, stirring occasionally until sweet potatoes are soft.
- Adjust salt to taste and serve with optional toppings.
