Instructions
- 1. In the Instant Pot, set to sauté and heat olive oil.
- 2. Sauté chopped onions, celery, and carrots until translucent, then add minced garlic and cook for 2 minutes.
- 3. Add sweet potatoes, broth, coconut milk, cinnamon, ginger, honey, nutmeg, paprika, salt, and pepper.
- 4. Stir and pressure cook for 15 minutes.
- 5. Quick release the steam, then blend the soup until creamy using an immersion blender.
