Ingredients

  • 1 teaspoon olive oil
  • ½ cup chopped onion
  • ½ cup chopped celery
  • ½ cup chopped carrots
  • 3 cloves garlic, minced
  • 3 pounds sweet potatoes, peeled and cut into large chunks
  • 3 cups broth (chicken or vegetable)
  • 1 can coconut milk (13.5 oz)
  • 2 tablespoons honey
  • ½ teaspoon ground ginger
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon paprika
  • to taste salt
  • to taste pepper

Instructions

  1. 1. In the Instant Pot, set to sauté and heat olive oil.
  2. 2. Sauté chopped onions, celery, and carrots until translucent, then add minced garlic and cook for 2 minutes.
  3. 3. Add sweet potatoes, broth, coconut milk, cinnamon, ginger, honey, nutmeg, paprika, salt, and pepper.
  4. 4. Stir and pressure cook for 15 minutes.
  5. 5. Quick release the steam, then blend the soup until creamy using an immersion blender.
