Leftover Steak and Spinach Quesadilla with Provolone

part-skim provolone cheese
Instructions
- Heat olive oil in a skillet.
- Add steak and heat until warmed through.
- Toss in spinach and cook until wilted.
- Remove steak and spinach from the pan.
- Place one tortilla in the pan and heat it.
- Flip the tortilla and place half a slice of cheese on one half.
- Layer steak and spinach over the cheese, then add another half slice of cheese on top.
- Fold the tortilla to create a half moon.
- Press down with a heavy pot for about 30 seconds.
- Flip the quesadilla and repeat on the other side.
- Remove from the pan and let cool slightly before slicing in half.
