Leftover Steak and Spinach Quesadilla with Provolone

Ingredients

  • 1 tsp extra virgin olive oil
  • 2 oz leftover flank steak
  • 1 big handful spinach
  • 1 6 inch whole grain tortilla
  • 1 slice part-skim provolone cheese

Instructions

  1. Heat olive oil in a skillet.
  2. Add steak and heat until warmed through.
  3. Toss in spinach and cook until wilted.
  4. Remove steak and spinach from the pan.
  5. Place one tortilla in the pan and heat it.
  6. Flip the tortilla and place half a slice of cheese on one half.
  7. Layer steak and spinach over the cheese, then add another half slice of cheese on top.
  8. Fold the tortilla to create a half moon.
  9. Press down with a heavy pot for about 30 seconds.
  10. Flip the quesadilla and repeat on the other side.
  11. Remove from the pan and let cool slightly before slicing in half.
