Philly Cheesesteak Quesadilla

Ingredients

The filling

  • 12-16 oz steak, thinly sliced into strips
  • ¼ cup diced green peppers
  • ¼ cup diced red peppers
  • ½ cup diced onions
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • to taste salt and pepper
  • 1 teaspoon olive oil or butter

The tortillas

  • 8 inch tortillas

Homemade Cheez Whiz Sauce (optional)

  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 cup milk
  • 2 cups grated cheese
  • ½ teaspoon garlic powder
  • to taste salt and pepper

Instructions

  1. Melt butter in a saucepan and whisk in flour to create a roux.
  2. Slowly add milk while whisking, then stir in grated cheese until melted.
  3. Season the cheese sauce with garlic powder, salt, and pepper, then set aside.
  4. In a skillet, cook the thinly sliced steak with smoked paprika, garlic powder, salt, and pepper.
  5. Add onions and bell peppers to the skillet and sauté until soft and caramelized.
  6. Drain excess juices from the meat and veggies, then pat dry.
  7. Spread Cheez Whiz sauce on each tortilla, then layer with steak, onions, and peppers.
  8. Top with another tortilla and cook in a skillet with oil or butter until golden brown on both sides.
  9. Repeat for remaining quesadillas.
