Ingredients

The filling

  • 1 pound ground beef or turkey
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 teaspoons dried minced onions
  • to taste salt and pepper
  • 1 teaspoon olive oil or butter
  • 8 8-inch tortillas
  • 1 cup grated cheese (cheddar and mozzarella)
  • ¼ cup diced pickles

Homemade Burger Sauce (Optional)

  • ½ cup mayo
  • 2-3 tablespoons ketchup
  • 1-2 tablespoons pickle relish
  • 1-2 teaspoons sweetener or sugar
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon vinegar
  • ¼ teaspoon mustard
  • to taste salt and pepper

Instructions

  1. Cook the ground beef in a skillet until no longer pink, then drain excess fat.
  2. Season the beef with Worcestershire sauce, onion powder, dried minced onions, smoked paprika, garlic powder, salt, and pepper.
  3. Remove from heat and pat the meat dry with a paper towel.
  4. Spread burger sauce over each tortilla.
  5. Divide cooked beef, pickles, and cheese among the tortillas.
  6. Top each with another tortilla to form a quesadilla.
  7. Cook each quesadilla in a skillet with olive oil or butter for 2-3 minutes on each side until golden brown and crispy.
  8. Repeat with remaining quesadillas.
