Vegetable Quesadillas

Ingredients

The filling

  • 1 tablespoon olive oil
  • ½ cup onion (diced)
  • 2 cups mixed veggies (diced or shredded)
  • ¾ teaspoon chili powder
  • 1 unit lime (juiced)
  • to taste unit salt
  • 2 cups cheese (grated)

The tortillas

  • 6 whole whole-wheat tortillas
  • to taste unit butter (for cooking)

Optional toppings

  • to taste unit sour cream
  • to taste unit avocado
  • to taste unit cilantro
  • to taste unit hot peppers
  • to taste unit salsa

Instructions

  1. Heat olive oil in a medium-sized sauté pan over medium heat.
  2. Add diced onions and mixed veggies, cooking until tender.
  3. Stir in chili powder, lime juice, and salt.
  4. Heat a griddle or pan to 375 degrees Fahrenheit.
  5. In a bowl, mix the cooked veggies with grated cheese.
  6. Spread the mixture on three tortillas and top with the remaining tortillas.
  7. Melt butter on the griddle or in the pan and cook the quesadillas until the bottom is browned.
  8. Flip the quesadillas and brown the other side.
  9. Let cool for a few minutes before cutting into triangles.
  10. Serve with optional toppings.
