Instructions
- Heat olive oil in a medium-sized sauté pan over medium heat.
- Add diced onions and mixed veggies, cooking until tender.
- Stir in chili powder, lime juice, and salt.
- Heat a griddle or pan to 375 degrees Fahrenheit.
- In a bowl, mix the cooked veggies with grated cheese.
- Spread the mixture on three tortillas and top with the remaining tortillas.
- Melt butter on the griddle or in the pan and cook the quesadillas until the bottom is browned.
- Flip the quesadillas and brown the other side.
- Let cool for a few minutes before cutting into triangles.
- Serve with optional toppings.
