Instructions
- Prepare the Avocado Crema by blending avocado, cilantro, milk, Greek yogurt, lime peel, lime juice, and salt until smooth.
- In a bowl, mix pinto beans, spinach, red cabbage, radishes, jalapeño (if using), chili powder, and salt for the filling.
- Heat a greased skillet over low-medium heat, place a tortilla in it, and add half of the filling and cheese on one side.
- Fold the tortilla over and cook until golden brown, then flip and cook the other side until golden and cheese is melted.
- Repeat with the remaining tortilla and filling ingredients.
- Serve the quesadillas with the avocado crema for dipping.
