Vegetarian Quesadilla with Avocado Crema

Ingredients

Avocado Crema

  • 1 whole avocado
  • ½ cup fresh cilantro
  • ½ cup Horizon Organic Whole Milk
  • ½ cup plain 5% Greek yogurt
  • 1 teaspoon grated lime peel
  • 1 tablespoon lime juice
  • to taste salt

Vegetarian Quesadilla

  • 1 can pinto beans, drained and rinsed
  • ½ cup chopped spinach
  • ½ cup shredded red cabbage
  • 3 whole radishes, thinly sliced
  • 1 whole jalapeño pepper, diced (optional)
  • 1 teaspoon chili powder
  • to taste salt
  • 2 whole burrito-size tortillas
  • 1 cup shredded Mexican-style cheese

Instructions

  1. Prepare the Avocado Crema by blending avocado, cilantro, milk, Greek yogurt, lime peel, lime juice, and salt until smooth.
  2. In a bowl, mix pinto beans, spinach, red cabbage, radishes, jalapeño (if using), chili powder, and salt for the filling.
  3. Heat a greased skillet over low-medium heat, place a tortilla in it, and add half of the filling and cheese on one side.
  4. Fold the tortilla over and cook until golden brown, then flip and cook the other side until golden and cheese is melted.
  5. Repeat with the remaining tortilla and filling ingredients.
  6. Serve the quesadillas with the avocado crema for dipping.
