Cheeseburger Quesadillas

Ingredients

Special Sauce

  • cup mayonnaise
  • cup ketchup
  • 2 tablespoons pickle juice
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • to taste salt and freshly ground black pepper

Quesadillas

  • 1 pound ground beef
  • 4 (8-inch) flour tortillas
  • 4 cups shredded cheddar cheese
  • 24 dill pickle chips (optional)

Wedge Salads

  • 1 head Iceberg lettuce (cored and cut into 4 wedges)
  • 8 cherry tomatoes (quartered)
  • 1 shallot (finely chopped)

Instructions

  1. Combine mayonnaise, ketchup, pickle juice, mustard, Worcestershire sauce, salt, and pepper in a small bowl to make the special sauce.
  2. In a large skillet, cook the ground beef over medium-high heat until browned, about 6 to 8 minutes. Drain well.
  3. Wipe out the skillet, coat with nonstick spray, and heat over medium heat.
  4. For each tortilla, add ½ cup cheese and ¼ of the cooked beef on one half. Add pickle slices if desired.
  5. Sprinkle the top half with another ½ cup cheese, fold, and cook until golden brown on one side, about 2 minutes. Flip and cook until the other side is golden and cheese is melted.
  6. Transfer to a plate and cover to keep warm. Repeat with remaining tortillas, cheese, beef, and pickles.
  7. Cut each quesadilla in half and stack 2 halves on each of the 4 plates.
  8. Add one wedge of iceberg lettuce to each plate, top with shallots and tomatoes, and drizzle with the special sauce.
