Iceberg lettuce (cored and cut into 4 wedges)

Instructions
- Combine mayonnaise, ketchup, pickle juice, mustard, Worcestershire sauce, salt, and pepper in a small bowl to make the special sauce.
- In a large skillet, cook the ground beef over medium-high heat until browned, about 6 to 8 minutes. Drain well.
- Wipe out the skillet, coat with nonstick spray, and heat over medium heat.
- For each tortilla, add ½ cup cheese and ¼ of the cooked beef on one half. Add pickle slices if desired.
- Sprinkle the top half with another ½ cup cheese, fold, and cook until golden brown on one side, about 2 minutes. Flip and cook until the other side is golden and cheese is melted.
- Transfer to a plate and cover to keep warm. Repeat with remaining tortillas, cheese, beef, and pickles.
- Cut each quesadilla in half and stack 2 halves on each of the 4 plates.
- Add one wedge of iceberg lettuce to each plate, top with shallots and tomatoes, and drizzle with the special sauce.
