Cheesy Ground Beef Quesadillas

Ingredients

The filling

  • 1 tbsp Unsalted Butter
  • ½ cup finely chopped Tomatoes
  • ½ cup finely chopped Bell Pepper
  • cup finely chopped White Onion
  • 1 clove Garlic
  • to taste Kosher Salt
  • to taste Freshly Cracked Pepper
  • ½ lb Ground Beef
  • 1 tbsp Taco Seasoning
  • cup Refried Beans

The quesadillas

  • 3 10" Flour Tortillas
  • cups Shredded Cheese

Toppings (optional)

  • Guacamole
  • Pico de Gallo

Instructions

  1. Mix the shredded cheese if using more than one type.
  2. Melt butter in a skillet over medium heat and add tomatoes, bell pepper, onion, and garlic with salt and pepper, cooking until tender.
  3. Add ground beef and taco seasoning, breaking the beef into smaller pieces and cooking until browned.
  4. Stir in refried beans and transfer the mixture to a bowl, covering to keep warm.
  5. In the skillet, place a tortilla and sprinkle half a cup of cheese on top.
  6. Add half a cup of the beef mixture on one side of the tortilla, spreading it over the cheese.
  7. Fold the tortilla over and press down gently, cooking until golden brown on one side.
  8. Flip the quesadilla and cook until the other side is golden brown.
  9. Transfer to a cutting board, cool slightly, and cut in half.
  10. Repeat with remaining tortillas and filling.
  11. Serve hot with toppings if desired.
