Instructions
- Mix the shredded cheese if using more than one type.
- Melt butter in a skillet over medium heat and add tomatoes, bell pepper, onion, and garlic with salt and pepper, cooking until tender.
- Add ground beef and taco seasoning, breaking the beef into smaller pieces and cooking until browned.
- Stir in refried beans and transfer the mixture to a bowl, covering to keep warm.
- In the skillet, place a tortilla and sprinkle half a cup of cheese on top.
- Add half a cup of the beef mixture on one side of the tortilla, spreading it over the cheese.
- Fold the tortilla over and press down gently, cooking until golden brown on one side.
- Flip the quesadilla and cook until the other side is golden brown.
- Transfer to a cutting board, cool slightly, and cut in half.
- Repeat with remaining tortillas and filling.
- Serve hot with toppings if desired.
