Instructions
- Cook the chopped bacon in a skillet until crispy, then remove and set aside.
- Season the chicken breasts with seasoning mix and cook in the skillet until no longer pink.
- Transfer the chicken to a bowl and cover to keep warm.
- Add the peppers, tomatoes, onion, and jalapeno to the skillet, season, and cook until soft.
- Shred the chicken and stir it into the cooked vegetables.
- In a non-stick pan, layer a tortilla with cheese, chicken mixture, and more cheese, then top with another tortilla.
- Cook until the bottom is browned, then flip and cook the other side.
- Cut the quesadilla into quarters and repeat with remaining ingredients.
- Serve hot with desired toppings.
