Cheesy Chicken Quesadillas

Ingredients

The filling

  • 2 strips Bacon
  • 1 tbsp Oil (avocado or vegetable)
  • 12 oz Chicken Breast
  • 2 tbsp Chicken Fajita or Taco Seasoning Mix
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • ½ cup Cherry Tomatoes
  • 1 small Onion (white or yellow)
  • ½ small Jalapeno
  • 1 tbsp Cilantro
  • 2 cloves Garlic
  • to taste Salt and Pepper
  • 2 cups Shredded Cheese

The tortillas

  • 8 pieces Flour Tortillas (6" in diameter)

Instructions

  1. Cook the chopped bacon in a skillet until crispy, then remove and set aside.
  2. Season the chicken breasts with seasoning mix and cook in the skillet until no longer pink.
  3. Transfer the chicken to a bowl and cover to keep warm.
  4. Add the peppers, tomatoes, onion, and jalapeno to the skillet, season, and cook until soft.
  5. Shred the chicken and stir it into the cooked vegetables.
  6. In a non-stick pan, layer a tortilla with cheese, chicken mixture, and more cheese, then top with another tortilla.
  7. Cook until the bottom is browned, then flip and cook the other side.
  8. Cut the quesadilla into quarters and repeat with remaining ingredients.
  9. Serve hot with desired toppings.
