Favorite Chicken Quesadillas

Ingredients

The quesadilla filling

  • 1 large chicken breast
  • 1 Tbsp. unsalted butter
  • cup green pepper, diced
  • cup red pepper, diced
  • cup roma tomato, deseeded and chopped
  • cup white onion, diced
  • 1 Tbsp. jalapeño, minced
  • ½ Tbsp. garlic, minced
  • 2 cups chihuahua cheese, grated
  • ¼ tsp. cumin
  • ¼ tsp. oregano
  • a pinch cayenne (optional)
  • to taste salt and pepper

The tortillas

  • 4 fajita size flour tortillas

Instructions

  1. Season the chicken breast with salt and pepper, cook it through, then set aside.
  2. In a sauté pan, melt the butter over medium heat, then add the diced green and red peppers and cook for 3-4 minutes.
  3. Add the chopped tomatoes, cumin, oregano, cayenne, and a pinch of salt and pepper, cooking for another 1-2 minutes.
  4. Stir in the minced jalapeños and cook for an additional 1-2 minutes.
  5. Add the minced garlic and cook until fragrant, then remove the veggie mixture from the pan.
  6. Slice the chicken into thin strips and prepare it next to the veggies.
  7. In the same pan, lay down one tortilla and spread ½ cup of cheese on top.
  8. Add half of the veggie mixture and some chicken on top of the cheese, then add another ½ cup of cheese and cover with a second tortilla.
  9. Press the top tortilla down gently and cook until the bottom is browned and crisp, then carefully flip and cook for another 3 minutes.
  10. Remove from heat, cut into quarters, and serve hot. Repeat for the second quesadilla.
