Favorite Chicken Quesadillas

The tortillas

Instructions
- Season the chicken breast with salt and pepper, cook it through, then set aside.
- In a sauté pan, melt the butter over medium heat, then add the diced green and red peppers and cook for 3-4 minutes.
- Add the chopped tomatoes, cumin, oregano, cayenne, and a pinch of salt and pepper, cooking for another 1-2 minutes.
- Stir in the minced jalapeños and cook for an additional 1-2 minutes.
- Add the minced garlic and cook until fragrant, then remove the veggie mixture from the pan.
- Slice the chicken into thin strips and prepare it next to the veggies.
- In the same pan, lay down one tortilla and spread ½ cup of cheese on top.
- Add half of the veggie mixture and some chicken on top of the cheese, then add another ½ cup of cheese and cover with a second tortilla.
- Press the top tortilla down gently and cook until the bottom is browned and crisp, then carefully flip and cook for another 3 minutes.
- Remove from heat, cut into quarters, and serve hot. Repeat for the second quesadilla.
