Instructions
- Season the chicken with chili powder, cumin, salt, and pepper.
- Heat olive oil in a skillet and sauté the chicken until fully cooked.
- Transfer the chicken to a bowl.
- In the same skillet, sauté bell pepper and red onion until tender, adding garlic at the end.
- Combine the sautéed vegetables with the chicken and add lime juice.
- Brush tortillas with melted butter and heat the skillet.
- Assemble the quesadillas by placing a tortilla in the skillet, adding cheese and the chicken mixture, then folding it over.
- Cook until golden brown on both sides.
- Repeat with remaining tortillas and filling, then cut into wedges and serve with toppings.
