Chicken Quesadillas

Ingredients

The filling

  • 1 1/4 lbs boneless skinless chicken breasts, diced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • ¾ tsp salt
  • ½ tsp black pepper
  • 4 tsp olive oil
  • 2 cups chopped bell pepper
  • cup chopped red onion
  • 2 cloves garlic, minced
  • 1 Tbsp fresh lime juice

The tortillas and cheese

  • 6 10-inch flour tortillas
  • 3 Tbsp butter, melted
  • 6 oz cheddar cheese, shredded
  • 6 oz monterey jack cheese, shredded

Optional toppings

  • to taste guacamole
  • to taste sour cream
  • to taste pico de gallo
  • to taste salsa

Instructions

  1. Season the chicken with chili powder, cumin, salt, and pepper.
  2. Heat olive oil in a skillet and sauté the chicken until fully cooked.
  3. Transfer the chicken to a bowl.
  4. In the same skillet, sauté bell pepper and red onion until tender, adding garlic at the end.
  5. Combine the sautéed vegetables with the chicken and add lime juice.
  6. Brush tortillas with melted butter and heat the skillet.
  7. Assemble the quesadillas by placing a tortilla in the skillet, adding cheese and the chicken mixture, then folding it over.
  8. Cook until golden brown on both sides.
  9. Repeat with remaining tortillas and filling, then cut into wedges and serve with toppings.
