Chicken Quesadillas

Ingredients

The filling

  • 1 lb ground chicken
  • ¼ medium yellow onion, finely diced
  • 1 teaspoon minced garlic
  • 1 medium green pepper, diced
  • 12 pieces cherry tomatoes, halved
  • 2.5 tablespoons taco seasoning
  • 2 tablespoons water

The quesadillas

  • 8 8-inch tortillas
  • 4 oz softened cream cheese
  • ½ cup guacamole or avocado
  • 1 cup shredded cheddar cheese
  • 1.5 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium/high heat and sauté onion and garlic for 2-3 minutes.
  2. Add ground chicken and cook for another 5 minutes until browned, then add taco seasoning and water.
  3. Stir in green pepper and tomatoes, cooking for an additional 2-3 minutes.
  4. Spread cream cheese and guacamole on one side of each tortilla, add meat mixture and cheese, then fold.
  5. Fry the quesadillas in a skillet with olive oil until crispy and cheese is melted.
