Instructions
- Mix all seasoning ingredients in a small bowl.
- Toss the chicken with half of the seasoning mixture and set aside.
- In a skillet, heat oil and add mushrooms, onions, and bell peppers. Sprinkle remaining seasoning over the veggies and cook until softened.
- Add broth or water to the veggies and cook until crisp-tender.
- Assemble the quesadillas by spreading cheese on half of each tortilla, adding chicken, veggies, and more cheese, then folding the tortilla in half.
- Cook the quesadillas in a skillet until golden on both sides and the cheese is melted.
- Cut into triangles and serve immediately.
