Instructions
- Season the chicken with salt and spices including cumin, paprika, coriander, oregano, chili powder, garlic, and onion powder.
- Heat oil in a skillet and cook the chicken for about 5-7 minutes until fully cooked, then set aside to cool.
- On a plate, place a tortilla and top with cheese, chicken, and salsa.
- Heat another skillet, spray with oil, and transfer the filled tortilla, placing another tortilla on top.
- Cook for about 3 minutes until the cheese melts and the tortilla browns.
- Flip the quesadilla onto a plate and slide the other side back into the skillet to cook for another minute.
- Cut into pieces and serve warm with guacamole and/or sour cream.
