Ingredients

The filling

  • 2 pieces boneless chicken breast (chopped)
  • ½ teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • ½ teaspoon dried oregano
  • ½ teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ medium onion (sliced)
  • to taste salt

The tortillas and cheese

  • 6 pieces flour tortillas (8 inches)
  • 1-2 cups shredded Monterey Jack cheese

The accompaniments

  • 1 cup salsa
  • to taste sour cream (optional)
  • to taste guacamole (optional)

Instructions

  1. Season the chicken with salt and spices including cumin, paprika, coriander, oregano, chili powder, garlic, and onion powder.
  2. Heat oil in a skillet and cook the chicken for about 5-7 minutes until fully cooked, then set aside to cool.
  3. On a plate, place a tortilla and top with cheese, chicken, and salsa.
  4. Heat another skillet, spray with oil, and transfer the filled tortilla, placing another tortilla on top.
  5. Cook for about 3 minutes until the cheese melts and the tortilla browns.
  6. Flip the quesadilla onto a plate and slide the other side back into the skillet to cook for another minute.
  7. Cut into pieces and serve warm with guacamole and/or sour cream.
