Chicken Quesadilla

Colby Jack cheese, shredded

sharp cheddar cheese, shredded

bell peppers, diced

onions, diced (sweet, white, or red)

Instructions
- Mix the Colby Jack cheese and sharp cheddar cheese in a bowl.
- Heat a frying pan over medium heat and add butter.
- Place a flour tortilla in the pan, buttered side down.
- Add ½ cup of cooked chicken on the tortilla.
- Sprinkle half of the cheese mixture over the chicken.
- Add half of the diced peppers, tomatoes, and onions on top.
- Fold the tortilla in half and cook for 2 minutes on each side until golden brown.
- Repeat the process for the second quesadilla.
- Keep the first quesadilla warm while cooking the second.
- Cut the quesadillas into sections and serve with dipping sauces.
