Chicken Quesadilla

Ingredients

  • 2 large flour tortillas
  • 1 cup cooked chicken, shredded or chopped
  • ½ cup Colby Jack cheese, shredded
  • ½ cup sharp cheddar cheese, shredded
  • ½ cup bell peppers, diced
  • ½ cup onions, diced (sweet, white, or red)
  • ½ cup tomatoes, diced
  • 1 teaspoon butter

Instructions

  1. Mix the Colby Jack cheese and sharp cheddar cheese in a bowl.
  2. Heat a frying pan over medium heat and add butter.
  3. Place a flour tortilla in the pan, buttered side down.
  4. Add ½ cup of cooked chicken on the tortilla.
  5. Sprinkle half of the cheese mixture over the chicken.
  6. Add half of the diced peppers, tomatoes, and onions on top.
  7. Fold the tortilla in half and cook for 2 minutes on each side until golden brown.
  8. Repeat the process for the second quesadilla.
  9. Keep the first quesadilla warm while cooking the second.
  10. Cut the quesadillas into sections and serve with dipping sauces.
