Ingredients

The filling

  • 2 teaspoons chili powder
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • 2 cups cooked diced or shredded chicken
  • 1 tablespoon olive oil
  • ½ yellow onion diced
  • 1 red bell pepper diced
  • 1 cup diced bell pepper (orange, yellow, or green)
  • 1 ¼ cups shredded pepper Jack or Monterey Jack cheese
  • ¾ cup shredded sharp cheddar cheese
  • 4 medium whole wheat tortillas
  • optional oil, butter, or nonstick spray
  • optional hot sauce

For serving

  • to taste prepared salsa
  • to taste guacamole
  • to taste sour cream or plain Greek yogurt

Instructions

  1. Mix chili powder, salt, and garlic powder in a small bowl.
  2. Coat chicken with half of the spice mixture and set aside.
  3. Heat oil in a skillet and sauté onion and bell peppers with the remaining spices until tender.
  4. Combine sautéed vegetables with the chicken.
  5. Assemble quesadillas by layering cheese, chicken, and vegetables on half of each tortilla.
  6. Fold the tortillas over and cook in the skillet until golden brown on both sides.
  7. Let cool, slice, and serve with toppings.
