Instructions
- Mix chili powder, salt, and garlic powder in a small bowl.
- Coat chicken with half of the spice mixture and set aside.
- Heat oil in a skillet and sauté onion and bell peppers with the remaining spices until tender.
- Combine sautéed vegetables with the chicken.
- Assemble quesadillas by layering cheese, chicken, and vegetables on half of each tortilla.
- Fold the tortillas over and cook in the skillet until golden brown on both sides.
- Let cool, slice, and serve with toppings.
