Healthier Chicken Quesadillas

Ingredients

The filling

  • 2-3 tbsp extra-virgin olive oil
  • 1 small yellow onion, sliced
  • ½ tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp chipotle powder
  • ¼ tsp smoked paprika
  • ¼ tsp ground coriander
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • ½ lb cooked chicken, shredded
  • ¼ cup sliced black olives
  • ¼ cup frozen corn kernels
  • ¼ cup water

The quesadillas

  • 200 g shredded Monterey Jack cheese
  • 4 8" whole wheat flour tortillas

Instructions

  1. Heat olive oil in a large skillet over medium heat and cook the onion until softened and slightly caramelized.
  2. Add the spices and stir well, then add the shredded chicken and coat it.
  3. Stir in black olives, corn, and water, and cook until heated through.
  4. In a medium skillet, add a teaspoon of oil and place one tortilla in it.
  5. Sprinkle a quarter of the cheese on the tortilla, top with half of the chicken mixture, and add another sprinkle of cheese.
  6. Cover with a second tortilla and press down firmly.
  7. Cook until golden brown on the bottom, then carefully flip to cook the other side until golden brown.
  8. Remove the finished quesadilla and repeat the process for the second quesadilla.
  9. Slice and serve with salsa and sour cream if desired.
