Healthier Chicken Quesadillas

Instructions
- Heat olive oil in a large skillet over medium heat and cook the onion until softened and slightly caramelized.
- Add the spices and stir well, then add the shredded chicken and coat it.
- Stir in black olives, corn, and water, and cook until heated through.
- In a medium skillet, add a teaspoon of oil and place one tortilla in it.
- Sprinkle a quarter of the cheese on the tortilla, top with half of the chicken mixture, and add another sprinkle of cheese.
- Cover with a second tortilla and press down firmly.
- Cook until golden brown on the bottom, then carefully flip to cook the other side until golden brown.
- Remove the finished quesadilla and repeat the process for the second quesadilla.
- Slice and serve with salsa and sour cream if desired.
